Challenge Accepted!

So David and I have made a commitment to eating at home more frequently.  We love eating out and trying new restaurants (and we do so often), but it can be so expensive.  We have committed to eating out only ONE time a week for dinner.  We're interested to see how much we can save in just one month.

Last night was our first night of calculating money spent on our at home meal.  We had hot dogs and sweet potato fries.
Here’s how it rounded out per person:

-David’s Meal:
Bar-S Hot dog Franks ($1.59): .20 cents per dog
King Soopers Whole-Wheat Hot Dog Buns (.89): .11 cents per bun
Alexia Sweet Potato Fries (1.09 after Qs) : .18 cents per serving

My Meal
Jennie-O Turkey Franks (1.00): .13 cent per dog
King Soopers Whole-Wheat Hot Dog Buns (.89): .11 cents per bun
Alexia Sweet Potato Fries (1.09 after Qs) : .18 cents per serving

Grand Total: .91 cents for hot dogs & sweet taters
This is nice, but I doubt every meal will be this inexpensive. But,
we were pretty excited to see what we could do!

Tonight we ate at home, but spent a more than a dollar.  However, we got great deals and used coupons on most of the ingredients at City Market.
We had crock-pot lasagna and Bruschetta, which was delicious.

-1/2 lb of ground beef
-1/2 lb of italian sausage
-1 jar of spaghetti sauce
-1 clove of garlic (minced)
-1/2 onion
-1 jar of ricotta cheese
-1/2 cup of plain yogurt (or some sour cream)
-1 cup mozzarella-parmesan blend cheese
-1 1/2 tsp of basil
-lasagna noodles

Directions: Brown beef and sausage with onion and garlic.  Mix in spaghetti sauce.  In a separate bowl, mix cheeses, yogurt, and basil.  Spray your Crock Pot well, then pour in enough meat sauce mixture to cover the bottom.  Place noodles (break them to fit) on top of meat sauce.  Cover noodles with cheese mixture and then add more meat sauce.  Repeat layering steps 3 times.  Cook for about 4 hours.

 Yummy Bruschetta!
-1 container fresh Roma tomatoes
-1/4 purple onion
-1 cup of parmesan cheese
-2-3 tbsp of chopped, fresh basil (as much as you like)
-approximately 1 tbsp of olive oil

Directions: Dice tomatoes and onion into small pieces.  Mix tomatoes, onion, cheese, basil and olive oil into bowl.  Serve with toasted baguette slices.

Props to my sis-in-law, Melissa, for teaching me to make this yummy appetizer.
